Garlic Lime Shrimp Lettuce Wraps

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 2 limes

Salt and pepper, to taste

1 medium avocado, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

8-10 large leafy Romaine or Butter lettuce leaves

Lime wedges and additional cilantro for garnish

Instructions
 

Marinate the Shrimp: In a large bowl, combine the shrimp with olive oil, minced garlic, red pepper flakes, lime zest, lime juice, salt, and pepper. Toss well to coat and let it marinate for about 20 minutes.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from heat and set aside.

      Prepare the Toppings: While the shrimp is cooking, prepare the toppings. In a separate bowl, combine the diced avocado, halved cherry tomatoes, chopped red onion, and cilantro. Gently toss them together and season with a squeeze of lime juice, salt, and pepper to taste.

        Assemble the Wraps: Take a lettuce leaf and place a few shrimp in the center. Top with the avocado-tomato mixture. You can add more lime juice and fresh cilantro for extra flavor.
