1 lb large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

Juice of 2 limes

Zest of 1 lime

1 teaspoon chili powder

1 teaspoon paprika

Salt and pepper to taste

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1/4 cup fresh cilantro, chopped

1 tablespoon sesame seeds (optional)

8 large butter or romaine lettuce leaves

Instructions
 

Marinate the Shrimp: In a medium bowl, combine shrimp, 2 tablespoons of olive oil, minced garlic, lime juice, lime zest, chili powder, paprika, salt, and pepper. Toss to coat well and let the shrimp marinate for at least 15 minutes.

    Prepare the Veggies: While the shrimp is marinating, shred the red cabbage and julienne the carrots. Set them aside in a mixing bowl and toss them with chopped cilantro.

      Cook the Shrimp: In a large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Once hot, add the marinated shrimp in a single layer, cooking for 2-3 minutes on each side until they are pink, opaque, and cooked through.

        Assemble the Wraps: To serve, take a lettuce leaf and fill it with a generous scoop of the cabbage and carrot mixture, followed by several pieces of garlic lime shrimp. Sprinkle with sesame seeds if desired.
