Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon chili powder

½ teaspoon cumin

Salt and pepper to taste

1 avocado, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 small bunch of cilantro, chopped

1 head of romaine lettuce or butter lettuce, leaves separated

Optional: Sriracha or your favorite hot sauce for serving

Instructions

Marinate the Shrimp: In a mixing bowl, combine olive oil, minced garlic, lime zest, lime juice, chili powder, cumin, salt, and pepper. Add the shrimp, ensuring they are well coated. Let marinate for at least 15 minutes at room temperature.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Discard any leftover marinade.

Prepare the Filling: In a separate bowl, mix together the diced avocado, halved cherry tomatoes, chopped red onion, and cilantro. Season with a pinch of salt and a squeeze of lime juice for added flavor.

Assemble the Wraps: Take a lettuce leaf and fill it with 2-3 shrimp, then top with a generous spoonful of the avocado-tomato mixture. Drizzle with additional lime juice or a splash of Sriracha if desired.

Serve: Place the filled lettuce wraps on a platter and serve immediately. Enjoy these fresh wraps with friends or family for a light and flavorful meal!
