4 ears of fresh sweet corn, husked

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon sea salt

1 teaspoon black pepper

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 tablespoon fresh lime juice

8 small corn tortillas

1 cup crumbled feta cheese (optional)

1 avocado, sliced

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Corn: Husk the ears of sweet corn and cut the kernels off the cobs. You should have about 4 cups of corn kernels.

      Season the Corn: In a large mixing bowl, combine the corn kernels, olive oil, minced garlic, smoked paprika, chili powder, sea salt, and black pepper. Toss until the corn is well-coated with the mixture.

        Roast the Corn: Spread the seasoned corn evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until the corn is golden and slightly caramelized.

          Add Fresh Herbs: Once roasted, remove the corn from the oven and allow it to cool for a few minutes. Stir in the fresh parsley, cilantro, and lime juice to the warm corn.

            Warm the Tortillas: In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until pliable.
