1 cup quinoa

2 cups vegetable broth (or water)

1 lb large shrimp (peeled and deveined)

4 tablespoons unsalted butter

4 cloves garlic (minced)

1/2 teaspoon red pepper flakes (adjust to taste)

1 tablespoon lemon juice

Salt and pepper to taste

1/4 cup fresh parsley (chopped, for garnish)

Optional: Lemon wedges for serving

Rinse the Quinoa: Start by rinsing the quinoa under cold water using a fine-mesh sieve to remove any bitterness.

    Cook the Quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed. Once done, remove from heat and let it sit for 5 minutes, then fluff with a fork.

      Prepare the Shrimp: While the quinoa is cooking, heat a large skillet over medium heat. Add the butter and let it melt.

        Sauté the Garlic: Once the butter is bubbling, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant, making sure not to let it brown.

          Cook the Shrimp: Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, until they turn pink and opaque.
