Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 cup mixed fresh fruits (pineapple, mango, strawberries, and kiwi), diced

1/2 cup frozen peas and carrots (thawed)

1/4 cup red bell pepper, diced

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sweet chili sauce

1 tablespoon sesame oil

1 tablespoon lime juice

Fresh mint leaves for garnish

1/4 cup shredded coconut (optional)

Salt and pepper to taste

Instructions

Prepare the Rice: If using fresh rice, cook it according to package instructions and let it cool. However, day-old rice is ideal for fried rice as it holds its shape better.

Sauté Aromatics: In a large pan or wok, heat the olive oil over medium heat. Add minced garlic and diced red bell pepper. Sauté for about 2 minutes until fragrant.

Add Vegetables: Add the thawed peas and carrots to the pan. Stir-fry for another 2-3 minutes until the vegetables are just cooked but still vibrant.

Incorporate Rice: Add the cooked jasmine rice to the vegetable mixture. Use a spatula to break apart any clumps, ensuring even mixing.

Flavor It Up: Pour in the soy sauce, sweet chili sauce, and sesame oil. Stir well to coat the rice and vegetables in the sauces. Season with salt and pepper to taste.

Mix in the Fruit: Gently fold in the diced fresh fruits, taking care not to mash them. Cook for an additional 2-3 minutes until heated through.

Add Finishing Touches: Stir in the lime juice and chopped green onions, mixing everything together for an additional minute.

Serve: Plate the fruit pizza fried rice and sprinkle shredded coconut on top if using. Garnish with fresh mint leaves for an added burst of freshness.

Enjoy warm as a unique main dish or a delightful side!
