Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup toasted coconut flakes

1/4 cup fresh or frozen fruit (e.g., strawberries, blueberries, or mango)

1 tablespoon chia seeds (optional, for added texture)

Pinch of sea salt

Instructions

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir until well blended and smooth. Adjust the sweetness according to your taste.

Add Fruit and Chia Seeds: Gently fold in the fresh or frozen fruit and chia seeds, if using. Ensure the fruit is evenly distributed throughout the yogurt mixture.

Line Your Pan: Take a baking sheet and line it with parchment paper. This will prevent the yogurt rounds from sticking.

Form Rounds: Using a cookie scoop or tablespoon, drop spoonfuls of the yogurt mixture onto the parchment paper. Flatten each scoop into round discs, approximately 1/2 inch thick. Leave space between each round to allow for spreading.

Add Toasted Coconut: Generously sprinkle toasted coconut flakes over each yogurt round before transferring to the freezer. You can press them down slightly to ensure they adhere well.

Freeze: Place the baking sheet in the freezer for at least 4 hours or until the yogurt rounds are completely frozen. For best results, leave them overnight.

Serve: Once frozen, you can remove the rounds from the parchment paper and serve them immediately as a delightful snack! They can be stored in an airtight container in the freezer for up to 2 weeks.

Prep Time: 15 minutes | Total Time: 4 hours (freezing) + 15 minutes prep | Servings: About 12 rounds
