1 cup Greek yogurt (plain or flavored)

1/2 cup shredded unsweetened coconut

2 tablespoons honey or maple syrup (optional for sweetness)

1 teaspoon vanilla extract

A pinch of salt

Fresh berries (strawberries, blueberries, or raspberries) for topping

Dark chocolate chips or cacao nibs for garnish (optional)

Instructions
 

Prepare the Coconut: Preheat your oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet and toast in the oven for about 5-7 minutes, stirring occasionally until golden brown. Keep an eye on it to prevent burning. Remove from oven and let it cool.

    Mix the Yogurt: In a medium bowl, combine the Greek yogurt, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Stir well until the mixture is smooth and evenly sweetened.

      Form the Coins: Line a baking sheet with parchment paper. Using a tablespoon, scoop dollops of the yogurt mixture onto the parchment, forming 1-2 inch circles or coins. Flatten each dollop slightly to form even disks.

        Add Coconut: Sprinkle the toasted coconut evenly over the tops of the yogurt coins, pressing gently to ensure the coconut adheres well to the yogurt.

          Freeze: Carefully place the baking sheet in the freezer. Freeze for at least 2 hours, or until the yogurt coins are firm.

            Serve: Once frozen, remove the yogurt coins from the parchment paper. Top each coin with fresh berries and a sprinkle of dark chocolate chips or cacao nibs for an extra indulgent touch.
