Ingredients

1 cup plain Greek yogurt

1 cup pumpkin puree (canned or homemade)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon allspice

2 cups oat flour (or regular flour)

1 tablespoon baking powder

1/4 teaspoon salt

Coconut oil or non-stick cooking spray (for greasing the pan)

For the Topping:

1/4 cup crushed graham crackers

1 tablespoon melted butter or coconut oil

1 teaspoon powdered sugar (optional)

Instructions

Prepare the Donut Batter:

In a large mixing bowl, combine the Greek yogurt, pumpkin puree, honey (or maple syrup), and vanilla extract. Mix until well blended.

      Incorporate Spices:

Add the ground cinnamon, nutmeg, ginger, and allspice to the mixture. Stir until the spices are evenly distributed.

          Combine Dry Ingredients:

In a separate bowl, whisk together the oat flour, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix!

              Preheat the Oven:

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with coconut oil or non-stick cooking spray.

                  Fill the Donut Pan:

Using a piping bag or a ziplock bag with the corner snipped off, pipe the batter into the greased donut pan, filling each cavity about 2/3 full.

                      Bake the Donuts:

Bake in the preheated oven for about 10-12 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool for a few minutes in the pan before transferring to a wire rack.

                          Prepare the Topping:

In a small bowl, mix the crushed graham crackers with melted butter (or coconut oil) and powdered sugar (if using). Stir until well combined.

                              Frozen Yogurt Topping:

While the donuts are cooling, you can prepare your frozen yogurt. Allow the Greek yogurt to chill in the freezer for about 30 minutes, stirring every 10 minutes until it's semi-frozen and scoopable.

                                  Assemble the Donuts:

Once the donuts have cooled, top each one with a generous scoop of the frozen yogurt. Sprinkle the graham cracker topping over the yogurt for that delicious pumpkin pie crust flavor!

                                      Freeze and Serve:

Place the assembled donuts in the freezer for about 1 hour to firm up the yogurt. Serve them cold and enjoy your delightful Frozen Yogurt Pumpkin Pie Donuts!
