Frozen Yogurt Pistachio Date Clusters

Ingredients
  

1 cup plain Greek yogurt (or dairy-free yogurt)

1/2 cup unsalted pistachios, coarsely chopped

1 cup medjool dates, pitted and chopped

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1/4 tsp sea salt

1/2 cup shredded coconut (optional for garnish)

Instructions
 

Prepare the Base: In a large bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Mix well until smooth and creamy.

    Add the Ingredients: Gently fold in the chopped pistachios and dates into the yogurt mixture, ensuring that they are evenly distributed.

      Form the Clusters: Use a tablespoon or small ice cream scoop to drop dollops of the yogurt mixture onto a parchment-lined baking sheet. You should be able to form about 12-16 clusters, depending on the size.

        Optional Coconut Coating: If desired, roll the clusters in shredded coconut for an extra flavor and texture boost. Place them back on the parchment paper.

          Freeze: Place the baking sheet in the freezer for at least 4 hours or until the clusters are completely frozen.

            Store and Serve: Once frozen, you can transfer the clusters to an airtight container for longer storage (up to one month). To serve, simply remove the desired number of clusters from the freezer and enjoy as a delightful snack!
