Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.

Prepare the Base: In a large mixing bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, cinnamon, and salt. Stir until all ingredients are well combined and the mixture is crumbly but holds together when pressed.

Bake the Base: Pour the oat mixture into the prepared baking dish and press it evenly into the bottom. Bake in the preheated oven for 15 minutes, until it’s lightly golden. Remove from the oven and let it cool completely.

Make the Yogurt Layer: In a separate bowl, whisk together the Greek yogurt, honey, vanilla extract, cooled coffee, and milk until smooth and creamy.

Assemble the Bars: Once the oat base is completely cool, pour the yogurt mixture over the base, spreading it out evenly with a spatula.

Add the Toppings: Sprinkle dark chocolate chips and crushed nuts over the yogurt layer. Gently press them into the mixture for better adherence.

Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until the bars are firmly set.

Slice and Serve: Once frozen, lift the bars out of the dish using the parchment overhang. Cut into squares or rectangles, serve immediately, and garnish with fresh berries if desired.
