Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup pure maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup walnuts, chopped

1/4 cup mini chocolate chips (optional)

1 tablespoon coconut oil, melted

Parchment paper

Instructions

Prepare the Base: In a medium mixing bowl, combine the Greek yogurt, maple syrup, vanilla extract, and sea salt. Stir until well blended and smooth.

Prepare Walnuts: In a separate small bowl, mix the chopped walnuts with the melted coconut oil. This will help the walnuts maintain a nice sheen and prevent sticking.

Combine Ingredients: Gently fold the walnut mixture and mini chocolate chips (if using) into the yogurt mixture until evenly distributed.

Shape the Circles: Line a baking sheet with parchment paper. Use a spoon or a cookie scoop to drop circles of the yogurt mixture onto the prepared baking sheet, making them about 2-3 inches in diameter. Leave space between the circles as they will expand slightly when spread.

Freeze: After you’ve placed all the yogurt circles on the baking sheet, place it in the freezer for at least 3-4 hours or until they are completely frozen solid.

Serve: Once frozen, carefully remove the circles from the parchment paper and serve immediately or store in a freezer-safe container. Enjoy as a refreshing treat!

Optional Topping: Drizzle a little extra maple syrup over the top before serving for added sweetness and a lovely glaze.
