Ingredients

2 cups plain Greek yogurt

1/4 cup honey

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 cup granola

1/2 cup mixed berries (fresh or frozen)

Pinch of salt

Instructions

Mix the Base: In a large bowl, combine the Greek yogurt, honey, vanilla extract, and a pinch of salt. Whisk until well combined and smooth.

Incorporate Chia Seeds: Add the chia seeds to the yogurt mixture and stir well to ensure they are evenly distributed. The chia seeds will help bind the mixture and provide a delightful texture.

Add the Extras: Gently fold in the granola and mixed berries, being careful not to break apart the berries too much if using fresh. Make sure everything is evenly mixed.

Shape the Clusters: Using a spoon or ice cream scoop, drop tablespoon-sized mounds of the mixture onto a parchment-lined baking sheet. Ensure there’s space between each cluster as they will expand slightly while freezing.

Freeze: Place the baking sheet in the freezer and allow the clusters to freeze for at least 3-4 hours or until completely solid.

Serve and Enjoy: Once frozen, remove the clusters from the baking sheet and store them in an airtight container in the freezer. Enjoy them as a healthy snack or dessert straight from the freezer!
