Ingredients

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup almond flour (or all-purpose flour)

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup mini chocolate chips

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup dairy-free or regular chocolate chips for topping (optional)

Instructions

Prepare the Cookie Dough Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended and creamy.

Dry Ingredients: In a separate bowl, whisk together the almond flour, baking soda, and salt until well combined.

Combine Mixtures: Gradually add the dry ingredients to the yogurt mixture. Stir until fully incorporated. This will create a thick cookie dough texture.

Add Mix-Ins: Gently fold in mini chocolate chips and chopped nuts (if using). Ensure they are evenly distributed throughout the dough.

Muffin Bite Formation: Line a mini muffin pan with parchment paper or silicone liners. Using a tablespoon, scoop the dough into each muffin cavity, filling them about 3/4 full.

Top with Chocolate (Optional): If desired, sprinkle a few chocolate chips on top of each muffin bite for an extra treat.

Freeze: Place the muffin pan in the freezer for at least 2-3 hours, until the muffin bites are completely frozen.

Serve: Once frozen, pop the muffin bites out of the pan and store them in an airtight container in the freezer. Enjoy them directly from the freezer for a cool treat!
