Frozen Yogurt Carrot Cake Swirls

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 1/2 cups shredded carrots (about 3 medium carrots)

1 cup crushed pineapple, drained

1/2 cup unsweetened shredded coconut

1/2 cup chopped walnuts or pecans

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

Pinch of salt

1 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon lemon juice

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth and well combined. Set aside.

    Mix in the Carrot Cake Ingredients: In a separate bowl, combine the shredded carrots, crushed pineapple, shredded coconut, chopped walnuts or pecans, cinnamon, ginger, nutmeg, and a pinch of salt. Mix well until all the ingredients are evenly distributed.

      Combine Mixtures: Gently fold the carrot mixture into the yogurt base until just combined, being careful not to over-mix to maintain texture.
