1 cup Greek yogurt (plain or vanilla)

1 cup almond flour

½ cup rolled oats

½ cup fresh or frozen blueberries

¼ cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

½ teaspoon baking powder

¼ teaspoon cinnamon

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with mini muffin liners, or generously grease each cup with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Whisk together until smooth.

      Combine Dry Ingredients: In another bowl, mix the almond flour, rolled oats, baking powder, cinnamon, and salt. Stir until combined.

        Incorporate Ingredients: Gradually add the dry mixture into the wet mixture, folding gently with a spatula. Be careful not to overmix. Add the blueberries and gently fold them into the batter.

          Fill Muffin Tins: Spoon the batter into the prepared mini muffin tin, filling each cup about ¾ full.
