Frozen Yogurt Berry Cheesecake Bites

Ingredients
  

1 cup plain Greek yogurt

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1/2 cup crushed graham crackers

2 tablespoons melted butter

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the softened cream cheese and powdered sugar. Use a hand mixer or whisk to blend until smooth.

    Add the Greek yogurt and vanilla extract to the bowl, continuing to mix until all ingredients are well combined and creamy.

      Gently fold in the mixed berries, making sure they are evenly distributed throughout the mixture.

        In a separate small bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand.

          Line a mini muffin tin with cupcake liners, and spoon about 1-2 teaspoons of the graham cracker mixture into the bottom of each liner, pressing down to form a crust.

            Carefully spoon the yogurt and berry mixture on top of the crusts, filling each liner nearly to the top.

              Freeze the bites for about 4-6 hours or until solid.

                Once frozen, remove the cheesecake bites from the muffin tin and peel off the liners.

                  Optionally, garnish with a fresh mint leaf for a pop of color and extra flavor before serving.
