Frozen Strawberry Cheesecake Coin Bites

Ingredients
  

1 ½ cups of graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1 (8 oz) package cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, pureed

½ cup Greek yogurt

½ teaspoon lemon juice

Pinch of salt

1 cup white chocolate chips (for drizzling)

Fresh strawberries, sliced (for garnish)

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a silicone coin mold or mini muffin tin to form a crust. Place in the freezer while you prepare the filling.

        Make the Cheesecake Filling:

          - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Add the powdered sugar, vanilla extract, Greek yogurt, lemon juice, and salt. Mix until fully combined and smooth.

              - Stir in the strawberry puree until the mixture is well incorporated.

                Assemble the Coin Bites:

                  - Remove the crust from the freezer. Spoon the cheesecake filling over the cooled crusts, filling each mold almost to the top.

                    - Place back in the freezer for at least 2-3 hours, or until solid.

                      Prepare the Chocolate Drizzle:

                        - While the bites are freezing, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

                          - Allow the melted chocolate to cool slightly before using.

                            Final Assembly:

                              - Once the cheesecake bites are frozen, gently pop them out of the molds.

                                - Drizzle the melted white chocolate over the bites using a fork or piping bag.

                                  - Garnish each bite with a slice of fresh strawberry.
