Ingredients

1 cup fresh or frozen raspberries

1 cup shredded unsweetened coconut

1/2 cup Greek yogurt (plain or vanilla)

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

Pinch of salt

1/4 cup chopped dark chocolate (optional, for drizzling)

Instructions

Prepare the Raspberries:

If using fresh raspberries, wash and drain them well. For frozen raspberries, ensure they are thawed and excess liquid is drained off.

      Blend the Base:

In a blender or food processor, combine the raspberries, Greek yogurt, honey, vanilla extract, and a pinch of salt. Pulse until the mixture is smooth but still has some small bits of raspberries for texture.

          Add the Coconut:

Transfer the blended mixture to a mixing bowl. Gently fold in the shredded coconut until well combined.

              Mold the Mixture:

Line a mini muffin tin or silicone molds with parchment paper or spray with cooking spray. Spoon the mixture into the molds, filling them to the top and pressing down lightly to ensure they hold their shape.

                  Freeze:

Place the filled molds in the freezer for about 2-3 hours, or until completely firm.

                      Prepare the Optional Chocolate Drizzle:

If you want to drizzle chocolate over your bites, melt the dark chocolate in a microwave-safe bowl or over a double boiler until smooth. Allow it to cool slightly before using.

                          Unmold and Drizzle:

Once the raspberry coconut bites are fully frozen, carefully remove them from the molds. Drizzle the melted chocolate over the frozen bites using a fork for a decorative touch.

                              Serve or Store:

Enjoy immediately, or place the bites in an airtight container and store them in the freezer for up to a month.
