2 cups rolled oats

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup chocolate chips (or mix-ins of your choice like nuts, dried fruit, or M&Ms)

Prepare Dry Ingredients: In a medium bowl, whisk together rolled oats, all-purpose flour, baking soda, cinnamon, and salt. Set aside.

    Cream Butter and Sugars: In a large mixing bowl, using a hand mixer or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

        Mix Dry Ingredients: Gradually add the dry ingredients to the wet mixture. Mix until just combined; avoid overmixing.

          Fold in Chocolate Chips: Gently fold in the chocolate chips or any other mix-ins you prefer.

            Form Dough Chunks: Line a baking sheet with parchment paper. Use a cookie scoop or tablespoon to drop chunks of dough onto the prepared sheet. Make sure there is space between each chunk.

              Freeze: Place the baking sheet in the freezer for about 1-2 hours, or until the chunks are firm.

                Store: Once frozen, transfer the dough chunks to a freezer-safe bag or container. Label with the date, and they can be stored for up to 3 months.
