Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 can (14 oz) sweetened condensed milk

1 cup freshly squeezed lemon juice (about 4-6 lemons)

Zest of 2 lemons

1 ½ cups whipped topping (thawed)

¼ cup powdered sugar

Lemon slices and mint leaves for garnish (optional)

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9x9-inch baking dish to create an even crust layer. Place it in the freezer for about 10-15 minutes to set.

Make the filling: In a large bowl, whisk together the sweetened condensed milk, freshly squeezed lemon juice, and lemon zest until well combined and smooth.

Fold in the whipped topping: Gently fold the thawed whipped topping into the lemon mixture until no streaks remain. Be careful not to deflate the mixture too much; you want it to stay light and fluffy.

Combine layers: Remove the crust from the freezer and pour the lemon filling over the chilled crust. Spread it evenly with a spatula.

Freeze: Cover with plastic wrap or aluminum foil and freeze the bars for at least 4 hours or until they are set and firm.

Serving: Once frozen, remove from the freezer and let it sit at room temperature for about 5 minutes before cutting. Use a sharp knife to slice into bars.

Garnish and enjoy: Optionally garnish each bar with a slice of lemon and a sprig of mint before serving.
