Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup powdered sugar

1/4 cup cocoa powder

1/2 cup brewed coffee (cooled)

1 teaspoon vanilla extract

1/4 cup chocolate chips (optional)

1/4 cup espresso powder (optional, for intense mocha flavor)

Pinch of salt

Instructions

Prepare the Coffee Mixture: In a mixing bowl, combine the brewed coffee, cocoa powder, espresso powder (if using), and a pinch of salt. Stir until the cocoa and espresso powder are fully dissolved and well blended. Set aside to cool completely.

Mix the Yogurt Base: In another large bowl, mix the Greek yogurt, powdered sugar, and vanilla extract until smooth and creamy. Taste the mixture and adjust the sweetness to your preference by adding more sugar if desired.

Combine Mixtures: Gradually add the cooled coffee mixture to the yogurt base, swirling it in. Use a spatula to gently fold the coffee mixture into the yogurt without fully combining it; you want marbled swirls, not complete mixing.

Add Chocolate Chips (Optional): If using chocolate chips, fold them in gently at this point, ensuring a few lumps of chocolate are distributed throughout the mixture to surprise your taste buds.

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, allowing some overhang on the sides for easy removal later. Pour the yogurt-coffee mixture into the prepared pan, spreading it evenly with a spatula.

Freeze the Bars: Cover the pan with plastic wrap or a lid and freeze for at least 4-6 hours, or until solid. For the best texture, overnight freezing is recommended.

Serve: Once frozen, lift the bars out of the pan using the parchment paper overhang and place them on a cutting board. Cut into squares or rectangles. Allow them to sit at room temperature for a few minutes before serving for easier slicing.

Store: Place any leftover bars in an airtight container between layers of parchment paper to prevent sticking. Store them in the freezer for up to two weeks (if they last that long!).

Prep Time: 20 minutes | Total Time: 6 hours (including freezing) | Servings: 12 bars
