2 ripe pineapples

1 can (14 oz) full-fat coconut milk

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

1/4 cup crushed almonds or macadamia nuts (optional for crunch)

Fresh mint leaves for garnish (optional)

Prepare the Pineapples: Carefully cut the tops off the pineapples and scoop out the insides using a pineapple corer or a sharp knife. Make sure to leave about 1/4 inch of flesh around the sides to create sturdy cups. Chop the scooped-out pineapple flesh into small chunks and set aside.
