Ingredients

2 ripe bananas

2 cups Greek yogurt (plain or coconut-flavored)

1 cup coconut milk (canned or carton)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

A pinch of salt

½ cup shredded coconut (unsweetened for a healthier option)

Optional toppings: chopped nuts, chocolate chips, or fruit slices

Instructions

Prep the Bananas: Peel the ripe bananas and place them in a blender or food processor.

Blend the Base: Add the Greek yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt to the blender. Blend until the mixture is smooth and creamy.

Incorporate Coconut: Mix in the shredded coconut by hand, stirring gently to distribute it evenly throughout the mixture.

Prepare the Molds: Pour the coconut banana yogurt mixture into popsicle molds, leaving a little space at the top as they will expand when freezing.

Insert Sticks: If your molds don’t come with built-in sticks, insert wooden popsicle sticks into the center of each mold.

Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until solid.

Unmold & Serve: Once frozen, run the molds under warm water for a few seconds to loosen the pops. Gently remove the pops from the molds and enjoy immediately!

Optional Toppings: If desired, dip the pops in melted chocolate and sprinkle with your choice of nuts, fruit slices, or extra shredded coconut for added texture and flavor.
