Frozen Blueberry Coconut Cream Bars

Ingredients
  

2 cups fresh or frozen blueberries

1/4 cup honey or maple syrup

1 cup coconut cream (chilled)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup coconut oil (melted)

1 tsp vanilla extract

1/4 cup shredded unsweetened coconut

1/2 cup graham cracker crumbs (or almond flour for a gluten-free option)

1 tbsp lemon juice

Pinch of salt

Instructions
 

Prepare the Blueberry Layer: In a medium saucepan over medium heat, combine blueberries, honey (or maple syrup), and lemon juice. Cook until the blueberries are warmed through and begin to break down, about 5 minutes. Remove from heat and let cool slightly.

    Blend Coconut Cream Mixture: In a blender or food processor, combine the chilled coconut cream, Greek yogurt, melted coconut oil, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

      Make the Base: In a medium bowl, mix the graham cracker crumbs (or almond flour) with a tablespoon of melted coconut oil until evenly coated. Press the mixture firmly into the bottom of an 8x8-inch (20x20 cm) dish to form an even base.

        Layer the Ingredients: Pour the coconut cream mixture over the graham cracker base, smoothing it out evenly with a spatula. Then, spoon the blueberry mixture on top of the coconut layer, gently swirling it with a knife to create a marbled effect.

          Finish with Coconut: Evenly sprinkle shredded coconut over the top of the blueberry layer.

            Freeze the Bars: Cover the dish with plastic wrap or a lid and freeze for at least 4-6 hours or until solid.

              Slice and Serve: Once frozen, remove from the freezer and let sit at room temperature for about 5-10 minutes to soften slightly. Use a sharp knife to slice into bars. Store any leftovers in an airtight container in the freezer.
