3 large ripe bananas

1 cup creamy peanut butter

1 cup chopped roasted unsalted peanuts

1 cup chocolate chips (dark or milk, as preferred)

2 tablespoons coconut oil

Sea salt (to taste)

Optional: mini chocolate chips for garnish

Prepare the Bananas: Peel the bananas and cut them into thick slices, roughly 1-inch wide. Lay the banana slices flat on a parchment-lined baking sheet.

    Add Peanut Butter: Using a teaspoon, scoop a dollop of creamy peanut butter onto half of the banana slices. Top each with another slice to make a banana sandwich.

      Coat with Peanuts: Sprinkle chopped roasted peanuts generously on top of the peanut butter on each banana sandwich. Gently press to secure them.

        Chill the Bites: Place the baking sheet in the freezer for about 1 hour to let the banana bites firm up.

          Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

            Dip the Bites: Once the banana sandwiches are firm, remove them from the freezer. Dip each sandwich in the melted chocolate, ensuring they are completely coated. Allow excess chocolate to drip off.
