Fresh Tomato Avocado Pasta

12 oz (340g) spaghetti or linguine

3 ripe medium tomatoes, diced

1 ripe avocado, pitted and diced

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

1/4 tsp red pepper flakes (optional)

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

    Prepare the Dressing: In a large mixing bowl, combine the chopped tomatoes, avocado, minced garlic, fresh basil, olive oil, and lemon juice. Stir gently to combine, being careful not to mash the avocado.

      Combine: Add the cooked pasta to the bowl with the tomato and avocado mixture. If the mixture looks dry, gradually stir in reserved pasta water until you reach your desired consistency.

        Season: Add salt, pepper, and red pepper flakes (if using) to taste. Toss everything together until well combined.

          Serve: Divide the pasta between plates or bowls. If desired, sprinkle with freshly grated Parmesan cheese and additional basil leaves for garnish.
