Fresh Summer Tomato and Corn Salad

Ingredients
  

4 cups fresh ripe tomatoes (heirloom, cherry, or a mix), chopped

2 cups sweet corn (fresh or grilled, kernels removed from the cob)

1 small red onion, diced

1/2 cup crumbled feta cheese (optional for a salty touch)

1/4 cup fresh basil leaves, torn or roughly chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

1 avocado, diced (optional for creaminess)

Lime wedges, for serving

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for about 3-4 minutes until tender. Remove from heat, cool slightly, and slice the kernels off the cob. If using grilled corn, simply grill on high heat until charred, then cut off the kernels.

    Chop the Vegetables: In a large mixing bowl, combine the chopped tomatoes, sweet corn, diced red onion, and torn basil leaves. If desired, add the diced avocado for extra creaminess.

      Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined. Taste and adjust seasoning as necessary.

        Toss the Salad: Pour the dressing over the tomato and corn mixture. Gently toss to combine all the ingredients and ensure everything is coated with the dressing.

          Add Feta (Optional): If you’re using feta cheese, sprinkle it over the top of the salad and gently mix it in.
