4 large ripe tomatoes, diced (heirloom for extra flavor)

2 cups sweet corn, fresh or grilled (about 3 ears of corn)

1 medium red onion, thinly sliced

1 cucumber, diced

1/2 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the ears of corn and cook for about 5-7 minutes, until tender. Remove from the water and let cool. Once cool, slice the kernels off the cob. If using grilled corn, just slice the kernels off the grilled ears.

    Combine Vegetables: In a large bowl, add the diced tomatoes, sweet corn kernels, sliced red onion, diced cucumber, and chopped basil. Toss gently to combine.

      Make the Dressing: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well mixed.

        Dress the Salad: Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

          Add Feta (Optional): If you’re using feta cheese, sprinkle it over the top of the salad and fold it in gently.

            Chill and Serve: Allow the salad to sit for at least 15 minutes to let the flavors meld. Serve chilled or at room temperature, garnished with additional basil if desired.
