Fresh Summer Tomato and Corn Salad

2 cups fresh cherry tomatoes, halved

1 cup sweet corn kernels (fresh or grilled)

1 small red onion, finely diced

1 medium cucumber, diced

1 avocado, diced

1/4 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

In a large mixing bowl, combine the halved cherry tomatoes, sweet corn kernels, diced red onion, diced cucumber, and diced avocado.

    Add the chopped basil leaves and crumbled feta cheese to the bowl if using.

      In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.

        Drizzle the dressing over the salad mixture and gently toss everything together until evenly coated.

          Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.

            Let the salad sit for about 10 minutes to allow the flavors to meld, then serve chilled or at room temperature.
