4 ripe heirloom tomatoes, diced

2 cups fresh corn kernels (about 2 ears of corn)

1 small red onion, finely chopped

1 cup cucumber, seeded and diced

1 bell pepper (any color), diced

1/4 cup fresh basil leaves, torn

1/4 cup fresh parsley, chopped

Juice of 1 lime

3 tablespoons extra virgin olive oil

Salt and pepper to taste

Feta cheese, crumbled (optional, for garnish)

Prepare the Corn: If using fresh corn, bring a pot of salted water to a boil. Add the corn and boil for 3-4 minutes until tender. Drain and let cool. Alternatively, you can grill the corn until slightly charred for added flavor. Once cooled, cut the kernels off the cob.

    Mix the Base Ingredients: In a large salad bowl, combine the diced heirloom tomatoes, corn kernels, finely chopped red onion, diced cucumber, and bell pepper.
