4 cups ripe cherry tomatoes, halved (mixed colors for vibrant presentation)

2 cups fresh corn kernels (about 3-4 ears of corn)

1 medium red onion, finely diced

1 medium cucumber, diced

1 ripe avocado, diced

1/4 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons extra-virgin olive oil

2 tablespoons apple cider vinegar

1 teaspoon honey (or maple syrup for vegan version)

Salt and pepper to taste

Juice of 1 lime

Prepare the Corn: If using fresh corn, bring a pot of water to boil. Add the corn on the cob and boil for 3-5 minutes, until tender. Remove from water and let cool. Once cool, use a sharp knife to cut kernels off the cob.

    Chop the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced red onion, diced cucumber, and diced avocado.
