4 ripe medium tomatoes, diced

2 cups fresh corn kernels (about 3-4 ears of corn)

1 small red onion, finely chopped

1/2 cup fresh basil leaves, torn

1/4 cup feta cheese, crumbled (optional)

3 tablespoons extra virgin olive oil

2 tablespoons apple cider vinegar

Salt and freshly ground black pepper to taste

1 teaspoon honey or maple syrup (optional, for sweetness)

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn cobs and blanch for about 4 minutes until tender. Remove, let cool slightly, then slice off the kernels. If using frozen corn, simply thaw and drain before use.
