4 medium fresh ripe tomatoes, diced

2 cups sweet corn kernels (fresh or frozen, thawed if frozen)

1 medium red onion, finely chopped

1 small cucumber, diced

1/4 cup fresh basil leaves, torn or chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 clove garlic, minced

Salt and pepper, to taste

Prepare the Vegetables: Start by dicing the tomatoes and cucumber, and finely chop the red onion. If using fresh corn, remove the kernels from the cob. If using frozen, ensure they are thawed and drained.

    Mix the Salad: In a large mixing bowl, combine the diced tomatoes, corn, red onion, cucumber, basil, and parsley. Gently toss until everything is well incorporated.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper until emulsified. Adjust seasoning to taste.
