Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk (plus an extra tablespoon for brushing)

For the Sausage Gravy:

1 pound breakfast sausage (hot or mild, according to preference)

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon black pepper (adjust to taste)

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.

    Make the Biscuit Dough:

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

        - Using a pastry cutter or your fingers, cut in the cold cubed butter until the mixture resembles coarse crumbs.

          - Add the buttermilk and stir gently until just combined. Do not overmix; the dough should be shaggy and sticky.

            Shape the Biscuits:

              - Turn the dough out onto a lightly floured surface. With floured hands, gently bring the dough together, folding it over on itself a few times to create layers.

                - Pat the dough into a 1-inch thick rectangle. Using a floured biscuit cutter or a drinking glass, cut out biscuits. Place them on the prepared baking sheet, close but not touching.

                  Bake the Biscuits:

                    - Brush the tops with a little buttermilk for a golden crust. Bake in the preheated oven for 12-15 minutes or until they are tall, fluffy, and golden brown.

                      - Once baked, remove from the oven and let them cool slightly on a wire rack.

                        Make the Sausage Gravy:

                          - In a large skillet over medium heat, crumble and cook the sausage until browned and fully cooked, about 5-7 minutes. Drain out excess grease if necessary, but leave about 2 tablespoons in the pan.

                            - Sprinkle the flour over the sausage and stir to coat. Cook for about 1-2 minutes.

                              - Slowly pour in the milk while continuously stirring to avoid lumps. Allow the gravy to simmer for 5-7 minutes until thickened. Season with black pepper, salt, garlic powder, and onion powder if using.

                                Serve:

                                  - Split the biscuits in half. Serve them warm, generously topped with sausage gravy, and enjoy every bite!
