Ingredients

8 slices of sourdough bread

1 cup fig jam

8 ounces cream cheese, softened

1 cup shredded sharp cheddar cheese

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

4 tablespoons unsalted butter, softened

Fresh arugula or spinach leaves for garnish (optional)

Salt and pepper to taste

Instructions

Prepare the filling: In a medium bowl, combine the softened cream cheese, thyme, salt, and pepper. Mix until smooth, ensuring the thyme is evenly distributed.

Assemble the sandwiches: Spread about 2 tablespoons of fig jam on one side of each slice of sourdough bread. On the opposite side, spread about 1 tablespoon of the cream cheese mixture. Sprinkle a generous amount of shredded cheddar cheese on the cream cheese-covered side.

Close the sandwiches: Top each cheesy side with another slice of bread, jam side down, to create a sandwich.

Butter the bread: Spread about 1 tablespoon of softened butter on the outer sides of each sandwich to ensure they toast to a golden brown.

Heat up: Preheat a skillet or griddle over medium heat. Once hot, place the sandwiches on the skillet. Cook for about 3-4 minutes on each side, pressing gently with a spatula, until the cheese is melted and the bread is crispy and golden brown.

Serve: Once toasted to perfection, remove the sandwiches from the skillet and let them rest for a minute. Cut them in half and serve with fresh arugula or spinach on the side for a delightful contrast.
