Ingredients

1 pound fresh green beans, trimmed

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch piece ginger, minced

1 tablespoon Szechuan peppercorns

2-3 red chilies, dried (adjust based on heat preference)

1/4 cup soy sauce

1 tablespoon rice vinegar

1 tablespoon chili oil

1 tablespoon hoisin sauce

1 teaspoon sugar

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Green Beans: Blanch the green beans in boiling water for 2 minutes. Immediately transfer them to an ice bath to maintain their vibrant green color and crunch. Drain and set aside.

Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat.

Add Aromatics: Once the oil is hot, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

Incorporate Spices: Toss in the Szechuan peppercorns and dried red chilies. Stir-fry for another minute, allowing the flavors to meld.

Add Green Beans: Add the blanched green beans to the wok and stir-fry for 3-4 minutes until they are heated through and start to blister.

Make the Sauce: In a small bowl, mix together the soy sauce, rice vinegar, chili oil, hoisin sauce, and sugar. Pour this mixture over the green beans in the wok and stir well to coat.

Cook to Perfection: Continue to stir-fry for another 2-3 minutes, ensuring that the green beans are well coated with the sauce and heated thoroughly.

Garnish and Serve: Remove from heat and garnish with chopped green onions and a sprinkle of sesame seeds. Serve hot as a side dish or over rice for a complete meal.
