Ingredients

1 pound ground turkey (or diced turkey breast)

1 cup wild rice blend (uncooked)

4 cups low-sodium chicken broth

1 cup diced carrots

1 cup diced celery

1 cup diced onion

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

1 cup fresh kale or spinach, chopped

1 cup heavy cream or coconut milk (for a dairy-free option)

Juice of 1 lemon

Optional garnish: chopped fresh parsley

Instructions

Brown the Turkey: In a skillet over medium heat, cook the ground turkey until browned and cooked through. Drain any excess fat and transfer to the crockpot.

Add Vegetables: Add the diced carrots, celery, onions, and minced garlic to the crockpot with the turkey.

Incorporate Rice and Seasonings: Stir in the uncooked wild rice blend, chicken broth, thyme, rosemary, bay leaf, salt, and black pepper.

Cook: Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the rice is tender and the flavors meld beautifully.

Final Touches: About 30 minutes before serving, stir in the chopped kale or spinach and the heavy cream (or coconut milk). Allow it to warm through.

Add Lemon Juice: Just before serving, stir in the fresh lemon juice for a bright finish. Taste and adjust seasonings if necessary.

Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy this cozy fall meal with crusty bread or crackers!
