Fall Crockpot Chicken Sausage Pasta

1 pound chicken sausage (sliced)

1 bell pepper (diced, any color)

1 onion (diced)

3 cloves garlic (minced)

1 cup mushrooms (sliced)

1 cup butternut squash (cubed, fresh or frozen)

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) tomato sauce

2 cups chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper (to taste)

3 cups uncooked pasta (penne or rigatoni works well)

1 cup grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

Prepare the Base: In the bottom of your crockpot, layer the sliced chicken sausage, diced bell pepper, diced onion, minced garlic, sliced mushrooms, and cubed butternut squash.

    Add Tomatoes: Pour the can of diced tomatoes (with juices) and the tomato sauce over the top of the vegetables and sausage.

      Season: Pour in the chicken broth, and add the Italian seasoning, red pepper flakes, salt, and pepper. Stir gently to combine all the ingredients.

        Cook Slow: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender and the flavors meld together.

          Cook the Pasta: About 30 minutes before serving, add the uncooked pasta to the crockpot. If your mixture appears too thick, add a little more chicken broth. Stir well, cover, and let it cook until the pasta is al dente.

            Serve: Once the pasta is cooked, taste and adjust seasonings if necessary. Serve hot, garnished with freshly grated Parmesan cheese and basil leaves.
