4 medium zucchini, sliced into rounds

1 medium onion, diced

2 cloves garlic, minced

6 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Optional: Red pepper flakes for a kick

Prepare the Pan: In a large oven-safe skillet, heat the olive oil over medium heat.

    Sauté the Vegetables: Add the diced onion to the skillet and cook for about 3–4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Zucchini: Add the sliced zucchini to the skillet. Season with salt, pepper, and oregano. Sauté for about 5–7 minutes until the zucchini is tender but still slightly crisp.

        Whisk the Eggs: In a mixing bowl, whisk together the eggs until well combined. Stir in the chopped basil, mozzarella cheese, and grated Parmesan cheese.

          Combine: Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to combine and distribute the vegetables evenly.

            Cook Indirectly: Cook on the stove for about 2–3 minutes until the edges begin to set. Then, transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15–20 minutes, or until the frittata is puffed and lightly golden on top.

              Serve: Let the frittata cool for a few minutes before slicing into wedges. Serve warm, garnished with additional fresh basil and a sprinkle of red pepper flakes, if desired.
