2 large ripe peaches, peeled and diced

1 cup plain Greek yogurt (or your favorite yogurt)

1/2 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 cup coconut milk (optional, for creaminess)

Pinch of salt

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Peaches: Start by washing and peeling the peaches. Remove the pit and dice them into small pieces. Set aside a few pieces for garnish if desired.

    Blend the Mixture: In a blender, combine the diced peaches, Greek yogurt, honey or maple syrup, vanilla extract, coconut milk (if using), and a pinch of salt. Blend until the mixture is smooth.

      Taste and Adjust: Taste the mixture and adjust the sweetness if necessary, adding more honey or maple syrup to your preference.

        Fill the Molds: Pour the peach yogurt mixture into popsicle molds, leaving a little space at the top for expansion. If you have leftover diced peaches, you can fold them into the mixture or layer them in the molds before pouring in the yogurt mixture.

          Insert Sticks: Place the popsicle sticks into the molds and ensure they are centered. If your molds don’t have a lid, cover the top with foil to hold the sticks in place.

            Freeze: Place the molds in the freezer and freeze for at least 5-6 hours, or until completely solid.

              Unmold and Serve: To remove the popsicles, run warm water over the outside of the mold for a few seconds to loosen them. Gently pull the popsicles out.

                Garnish & Enjoy: Serve immediately, garnishing with fresh mint leaves and any reserved peach pieces if desired.
