Easy Marry-Me Chicken

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes in olive oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Red pepper flakes (optional, for a bit of heat)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Once the oil is hot, add the chicken and sear for about 4-5 minutes on each side, until they are golden brown. Transfer the chicken to a plate and set aside.

      Create the Sauce: In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the chopped sun-dried tomatoes and cook for another 1-2 minutes. Pour in the heavy cream and bring to a gentle simmer.

        Add Cheese and Seasoning: Stir in the Parmesan cheese and Italian seasoning, mixing well until the cheese is melted and the sauce is creamy. Adjust salt and pepper to taste. If desired, sprinkle in red pepper flakes for some spice.

          Combine and Bake: Return the seared chicken breasts to the skillet, spooning some of the sauce over them. If your skillet is oven-safe, transfer it directly to the oven. If not, transfer everything to a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

            Serve: Once out of the oven, let the chicken rest for a few minutes. Serve hot, garnished with fresh basil leaves if desired, and drizzled with the creamy sun-dried tomato sauce.
