8 oz (225g) pasta (macaroni or any short pasta)

1 cup (250g) mixed berries (strawberries, blueberries, raspberries)

1 cup (240ml) coconut milk

1 cup (240g) ricotta cheese

1/2 cup (100g) sugar or maple syrup (adjust to taste)

1 tsp pure vanilla extract

1/2 tsp ground cinnamon

Zest of 1 lemon

1/4 cup (30g) grated coconut (optional for topping)

1/4 cup (30g) chopped nuts (almonds or walnuts, optional for topping)

Fresh mint leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Preheat Oven: Preheat your oven to 350°F (175°C).

      Prepare the Creamy Mixture: In a mixing bowl, combine the coconut milk, ricotta cheese, sugar or maple syrup, vanilla extract, ground cinnamon, and lemon zest. Whisk until smooth and well blended.

        Combine Ingredients: In a large mixing bowl, toss the cooked pasta and mixed berries gently to coat. Pour the creamy mixture over the pasta and berries, stirring gently until everything is evenly coated.
