2 medium cucumbers, julienned

1 large green apple, cored and thinly sliced

1 cup shredded carrots

1/2 cup red cabbage, finely shredded

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

3 tablespoons apple cider vinegar

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon Dijon mustard

1/2 teaspoon sea salt

Freshly ground black pepper, to taste

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Prepare the Vegetables and Fruit: Start by washing all produce thoroughly. Julienne the cucumbers and slice the green apple thinly, keeping the skin on for added nutrition and color. Shred the carrots and red cabbage. Thinly slice the red onion.

    Make the Dressing: In a small mixing bowl, whisk together the apple cider vinegar, honey (or maple syrup), Dijon mustard, sea salt, and a dash of black pepper until well combined and emulsified.
