2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray or 2 tablespoons of olive oil

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare Zucchinis: Wash and dry the zucchinis. Cut off the ends, then slice them into thin sticks, about 1/4 inch thick, to resemble fries.

      Set Up Breading Station: In three separate shallow dishes, place the flour in one, whisk the eggs in the second, and mix the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and pepper together in the third.

        Coat the Zucchini: Take each zucchini stick, first dredge in the flour, shaking off any excess. Then dip it in the egg, allowing any excess to drip off. Finally, coat it in the breadcrumb mixture, pressing gently to help the crumbs adhere.

          Arrange on Baking Sheet: Place the coated zucchini fries in a single layer on the prepared baking sheet. Lightly spray or drizzle them with olive oil to encourage a crispy texture.

            Bake: Bake in the preheated oven for 20-25 minutes, flipping the zucchini fries halfway through, until they are golden brown and crispy.
