1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 avocado, diced

1 cup tortilla chips, crushed

1 small red onion, finely chopped

1 jalapeño, seeded and finely diced (optional for heat)

1 cup vegan cheese shreds (or nutritional yeast for a healthier option)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Prepare the Salad Base: In a large mixing bowl, add the chopped romaine lettuce as your base for the salad.
