Crunchy Tofu Rainbow Stir-Fry

Ingredients
  

1 block firm tofu (14 oz), pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil, divided

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

1 cup red cabbage, shredded

3 green onions, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon sesame oil

Sesame seeds for garnishing

Fresh cilantro for garnishing (optional)

Instructions
 

Prepare the Tofu: Drain the tofu and press it for at least 15 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes. Toss the tofu cubes in cornstarch until evenly coated.

    Cook the Tofu: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes to the skillet in a single layer. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy. Once cooked, remove the tofu from the skillet and set aside.

      Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, add the sliced bell peppers, broccoli, snap peas, and carrots. Stir-fry for 4-5 minutes, or until the vegetables are tender-crisp.

        Add Cabbage and Sauces: Toss in the shredded red cabbage and continue to stir-fry for an additional 2 minutes. Then, add the soy sauce, hoisin sauce, and sesame oil. Stir well to coat all the vegetables with the sauces.

          Combine Tofu and Serve: Gently add the crispy tofu back into the skillet. Toss everything together until well mixed and heated through. Remove from heat and stir in the sliced green onions.
