Crunchy Southwest Veggie Wraps

4 large whole wheat tortillas

1 cup black beans, rinsed and drained

1 cup corn, cooked (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

1 cup cherry tomatoes, halved

½ cup red onion, thinly sliced

1 cup shredded romaine lettuce or spinach

½ cup shredded cheddar cheese (or dairy-free alternative)

¼ cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon lime juice

Salt and pepper to taste

Optional: ½ cup Greek yogurt or ranch dressing for serving

Instructions
 

Prepare the Veggie Mixture: In a large mixing bowl, combine black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.

    Season the Mixture: Add cumin, smoked paprika, lime juice, salt, and pepper to the bowl. Toss everything gently until well combined. Make sure the avocado is evenly distributed but remains chunky.

      Warm the Tortillas: Lightly toast the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. In the center, place a generous handful of the veggie mixture, followed by a handful of shredded romaine lettuce and a sprinkle of cheddar cheese.

          Wrap It Up: Fold in the sides of the tortilla and then roll it from the bottom up to create a tight wrap. Repeat with the remaining tortillas and filling.
