1 cup pumpkin seeds (pepitas)

1/2 cup sunflower seeds

1/4 cup sesame seeds

2 tablespoons olive oil

1 tablespoon maple syrup or honey

1 teaspoon sea salt

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 cup dried cranberries or raisins (for a sweet touch)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy clean-up.

    Prepare the Nut Mixture: In a large mixing bowl, combine the mixed nuts, pumpkin seeds, sunflower seeds, and sesame seeds.

      Make the Coating: In a smaller bowl, whisk together the olive oil, maple syrup (or honey), sea salt, smoked paprika, cayenne pepper (if using), garlic powder, onion powder, and black pepper until well combined.

        Combine: Pour the coating mixture over the nut blend. Using a spatula or wooden spoon, stir until all the nuts and seeds are evenly coated with the spice blend.

          Spread on Baking Sheet: Transfer the coated nut mix onto the prepared baking sheet, spreading it out into an even layer to ensure even roasting.

            Roast: Bake in the preheated oven for 15 minutes. Remove from the oven, stir the mix to ensure even roasting, and return it to the oven for an additional 10-15 minutes, or until golden brown and fragrant. Keep an eye on it to avoid burning.
