2 medium-sized beets (preferably organic)

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Optional: 1/4 teaspoon cayenne pepper for heat

Fresh herbs for garnish (like dill or thyme)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking.

    Prepare the Beets: Wash the beets thoroughly to remove any dirt. Trim off the greens and root ends, then peel them using a vegetable peeler.

      Slice the Beets: Using a mandoline slicer (or a sharp knife), slice the beets very thinly—about 1/8 inch thick. The thinner they are, the crunchier they will become.

        Season the Slices: In a large bowl, combine the sliced beets with olive oil, sea salt, garlic powder, smoked paprika, and cayenne pepper if you desire some heat. Toss well to ensure all slices are evenly coated.

          Arrange on Baking Sheet: Spread the seasoned beet slices in a single layer on the prepared baking sheet, making sure they do not overlap for the best crispness.

            Roast the Chips: Place the baking sheet in the preheated oven and roast the beet slices for 20-25 minutes, flipping halfway through, until they are crisp and slightly curled. Keep a close eye on them to prevent burning as different ovens may vary.

              Cool Down: Once done, remove the beet chips from the oven and let them cool on the baking sheet for about 5 minutes. They will continue to crisp up as they cool.

                Garnish and Serve: Once cooled, transfer the beet chips to a serving bowl. Garnish with fresh herbs if desired and enjoy as a healthy snack or as a colorful side to your meal!
